Do desserts with butterscotch chips make you nostalgic? It seems that chocolate, peanut butter and caramel tend to take the spotlight in treat recipes. In all honesty, I don’t use butterscotch all that frequently. When I do, it takes me straight back to childhood!

Are Butterscotch Mixed Nut Bars a Blondie?
No. This cookie bar recipe has an easy shortbread base that is topped with a sweet and salty layer made from butterscotch chips and sweetened condensed milk. The mixed nuts and shortbread base balance the sweetness. For extra contrast, drizzle the top with dark chocolate.

Let’s Make These Easy Butterscotch Nut Bars
Grease a 9×9 baking pan very well and line with parchment paper. Cream the butter and powdered sugar until fluffy, then add the flour and salt until just combined. Press the crumbly dough into the pan and bake until edges are lightly browned, about 12–15 minutes.
What Mixed Nuts Should I Use?
Use any combination totaling 1⅓ cups. Walnuts, peanuts, and almonds work well, but the recipe is flexible and any favorite nuts can be used.

Making the Sweet and Salty Layer
While the base bakes, mix together the butterscotch chips, sweetened condensed milk, chopped nuts, and vanilla extract. Spread over the baked base and bake another 25–30 minutes until golden at the edges. Cool completely, cut into bars, and drizzle with melted chocolate if desired.

- 14 oz sweetened condensed milk
- 1 cup butterscotch chips
- 1⅓ cups mixed nuts, chopped
- 1 teaspoon vanilla extract
- 2 oz chocolate, melted (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×9 pan.
- Cream butter and sugar until fluffy. Mix in flour and salt until just combined and press into the pan.
- Bake 12–15 minutes until lightly browned at edges.
- Mix condensed milk, butterscotch chips, nuts, and vanilla. Spread over base.
- Bake 25–30 minutes more until golden.
- Cool completely, cut into squares, and drizzle with melted chocolate if desired.
